Rene Ortiz, who is currently working with Brooklyn’s Paloma resturant, is the former executive chef of the widely praised Mexican restaurant La Esquina. He studied environmental engineering at the University of Texas, San Antonio, before moving to New York in 1989, followed by a stint in Sydney.

I wish i knew of this “lecture”. I was with this man for 8 yrs. I left because he decided to have an affair with a co-worker. Also, his bio is false. Liberal arts at a community college is not the same as environmental science, and we moved here in 1998.
